Salmon frittata sandwiches

  • 5 eggs
  • 2 tablespoons Vegeta Natur Mediteran
  • 40 g fresh spinach
  • 80 g ricotta cheese
  • extra virgin olive oil
  • salt
  • 150 g smoked salmon (or slices of prosciutto...)
  • 200 g cream cheese


  1. 1.
    In a large bowl, beat 4 eggs. Add Vegeta Natur Mediteran, stir together and add pasta.
  2. 2.
    In the food processor, add egg, ricotta cheese and spinach and chop. Add this mixture to the eggs and stir well.
  3. 3.
    In a non-stick frying pan (24 cm), heat a little oil and use half the mixture to make an omelette. First fry on one side with the pan covered, and then carefully flip to lightly fry the other side.

    Remove the omelette and repeat with the remainder of the mixture.
  5. 5.
    Cut the omelette into a round or flower shape using a mould (6 – 8 cm).
  6. 6.
    On one layer, spread the cream cheese and add a slice of smoked salmon, and cover with the second slice of omelette. Decorate with fresh spinach leaves.


Use a toothpick to hold together and serve.


The omelette will be easy to turn if you cover the pan with a plate, and then slide the omelette back into the pan on the other side.
