Slice zucchini lengthwise into long, thin strips and fry lightly in a little olive oil in a pan or grill pan.
When softened enough to bend, remove and drain on paper towels.
For the filling, add the cheese to the drained tuna, mix well and add the Vegeta Natur Mediteran and parsley.
Place a spoonful of filling onto each zucchini slice and roll up. Use a toothpick to hold the roll together. Repeat for each zucchini slice.
Keep in the refrigerator until serving time.
Serve as an appetizer.
Small, young eggplants can be used instead of zucchini.
