Preparation

Slice zucchini lengthwise into long slices, lightly salt and let stand. Slice tomatoes in half, and mozzarella into slices. Beat the eggs, mix in Vegeta Natur and grated cheese.

In a thick-bottomed pan, add clove of garlic to hot oil, and add tomatoes. Briefly fry and remove both tomatoes and garlic. Add in egg mixture.

Lay zucchini slices in egg mixture in a single layer, top with mozzarella slices and fried tomatoes. Cook over low heat for several minutes.
Serving
Sprinkle finished frittata with colourful ground pepper and serve with a green salad.
Advice
If you love meaty dishes, you can also add slices of sausage to the eggs. If you have a frying pan that can go into the oven, you can bake the frittata in the oven for about 20 minutes at 180°C. If you are preparing the frittata in a pan, be sure to use a lava pan or a thick-bottomed pan.
