Heat up half of the olive oil in a pan and fry the onions. Add tomatoes, sugar, ½ tablespoon Vegeta Natur and simmer on mild heat for 15 minutes.
In a separate pan heat up the rest of olive oil and fry the zucchini. Add the rest of Vegeta Natur and fry for another minute.
Add the zucchini to the first pan with tomato and stir through. Add garlic, tomato juice and let it simmer for few minutes.
Sprinkle prepared salsa with parsley and pour over cooked pasta.
Instead of canned tomato, fresh tomato can be used. To fried onion add 300-350g fresh tomatoes (seeds removed, peeled and chopped).
